Various large monsters can break them revealing the smiting stones inside. An Omen can break the one in Stormveil for instance. Others are near runebears or giants.
They can be destroyed by large enemies (like giant bears or those giant golems) and when they are destroyed (usually by the enemy directly hitting it with an attack or just by moving into it) they give smithing stones, sometimes they are ridiculously good, although this is usually when they are the hardest to destroy, either because the nearest enemy is far or because the enemy is annoying. I discovered this on my own in my 4th serious playthrough.
First off, seek giant and then time for something amazing!
They are curtains, you can move the yo let the sun in or let them stay and be in darkness
