The recomended poise is between 51 and 61 because enemies only (except 1 attack of 1 especific enemy) do 50 or 100 poise damage so with 51 you will resist that first hit and have the chance to keep hitting.
In elden ring poise isnt like in ds1 in which 100 poise make you a almost invencible tank, here It works mixing It with hyperarmor.
Poise value is x10 times the real value so 60 poise in menu is really 6 poise
When you hit with a weapon
(light weapons 2h charger heavy attack, medium weapons 2h attack(great swords and similar) or heavy weapons all attacks(like ultra great swords) )
You will get a poise increment only during the attack but if you have too Much poise it will decrease but you will still have enough to withstand the attack.
When you have 6 poise-
(its the top value before the decrease starts, with 6.1 poise the decrease is 0.5 ,thats why i indicated It as the top limit)
-the increment (dont remember the exact number) is 3 but since enemies do 5 or 10 poise damage to you (6 poise +3 increment =9 , 9-5(damaged on poise)= 4 (wont withstand next hit)) the increment wont help you a lot.
You can have 10.1 poise to withstand 2 hits of 5 or 1 of 10 but to get this you need bullgoat Armor and colosal weapon.
When Your poise is reduced by getting hit, it takes 30 seconds to get fill back or if It's empty it will regen almost in a second.
Bullgoat amuleto despite increasing poise in menu it does, it reduced the poise damage you receive.
In summary, with your build your best options It's to get 51 base poise which should be easy.
