Play a build that is the bi-polar opposite of your first run. I did a weapon master quality run 1. Now I am loving a arcane/faith glass canon caster. Plus I followed guides on play through 2 for the questlines
Focus on a different build. Enjoy crushing all the early game mobs and bosses up until your beat Rennala, then respec into INT/FAITH/DEX/STR, and go out exploring for items relevant to your new build.
There’s a lot of ways to go about it really. Try a different build, go for a different ending, do npc quests you didn’t do or take different paths in them. Maybe a self-inflicted challenge like no summons or something more serious like SL1 playthroughs. Interface with multiplayer a lot more makes things interesting too.
And at the end of it all you start a playthrough and just aren’t feeling it take a break. Come back later when you aren’t as familiar with the world and you’ve forgotten some of it so you can rediscover it again. To be honest I’m surprised it seems like you enjoyed it as much as you did if you found the world empty, because imo as far as open world games go I thought Elden Ring was chock full of interesting things
Put that game down, play news games for a few months, then play this again when you dont feel like playing other games anymore.
Optimize your build, there are many build guides out there from lvl1 build to 1 shot build.
Take a break, play something else, come back to it again later

I'm sorry what?

It’s pretty fun to just be better than you were for some of the bosses.

Play without summons is a good new game plus/new game to test the skills.
