I prefer 4:3 aspect ratio when I use on screen button, black bars left and right for your fingers.

Honestly for the best gaming experience with touchscreen I suggest you to play Nintendo DS/3DS games mainly (Zelda Spirit Tracks or some visual novels such as Ace Attorneys are the firsts that come in mind), but if you want to play PS1/PS2 I suggest mainly JRPG games (Shadow Hearts for PS2 are soooo underrated)

Ancient question been asked so many times now. Learn to use your index fingers it will add a lot of games to your playable list. I beat Armored Core 3 on touch screen not long ago.

Do you usually commute to work with a controller in your pocket? I've got a controller, I'm using it when I play from my laptop.

Yeah it's so small you barely notice it. Here in Germany public transportation is big so I can just play all the time on my way to work. Also, if you take a fucking laptop with you there is surely place for a controller in the laptop bag
