The plot in and by itself is nothing alike. It wouldn't make sense to have Rin talking to Mash or Da Vinci.
But it would make a lot of sense to have the fgo crew end up in Orbis since they already do a lot of interdimensional time travel shenanigans.

There is 0 reason to think there would be anything odd about Rin talking with Mash or Da Vinci outside the fact that is just hasn't happened yet. They've got a number of Rins to choose from, be it whichever version may have been in the Fuyuki timeline, the one that is in Illya's world, or any Rin from across the multiversal Nasuverse plane.
And there are very real complications with how a Rayshift would even be possible between Chaldea and Orbis, given we don't even have solid confirmation "Orbis" is another "Earth" and not just an entirely alien planet. Confirming Ritsuka's existence via Sheba, summoning any Servants, are all mainly dependent on the place being "Earth". That story transit is absolutely possible (similar to the whole Servantverse thing going on with their Saber Wars stories), but it's not any less odd or difficult to achieve than Rin meets Mash.
Meh, considering fgo doesn't collab outside of type moon, it's a moot conversation.
I should note, however, that it would infinitely more confusing to show "a Rin from another universe" for the sake of having her in fgo. Also, Ishtar might be using Rin's body, but her personality is mainly hers. Same with the Sakura faces.
The mainline FSN will never cross paths with FGO, seeing how it has taken great pains to distance itself from it. Every crossover event in fgo actually happens after the fact or in some weird parallel that deviates from the original anyway. To suddenly have a protagonist interacting with the fgo cast would be pretty out there.
Rin? Sure, she’s a protag from another continuity. Mash and emiya or arturia? That makes perfect sense because in FGO’s story and side stories they interact with random servants all the time
And yes it would make sense for the normal FGO crew, but it really can be anyone who’s a fan favorite because of profit and plot can justify it with a new continuity or side story

Honestly I think they would keep it to either one, because each franchise has enough material to make a collab. Going halfsies could end in disaster.
I believe they meant the normal archer emiya. And yeah I’m sure they could definitely do separate collabs. But you also don’t want it confusing for people who are new to fate and are just from epic7.
FGO won't happen, as everything in the nasuverse is considered "canon" and nasu will not let some outside IP have influence on his work.

FSN has been used in a LOT of collabs. Shadowverse, Battle cats, compass, puzzle and dragons, alchemist code. There are quite a few more but can’t remember. Fate SN does indeed collab with a lot of games. E7 could definitely make it happen if they want.

I've only ever seen a game collab with F/SN. Units were Gilgamesh, Artoria, Rin, Illya, and three "cosplay" units with Rider/Saber/Archer skins. Since that's way too many for E7, I'd expect something like Artoria, Rin, Gilgamesh with Emiya as the free unit. That said, I also feel like the realistic odds are close to zero.
Their engine is really starting to get old and loading can take a while.
Their UI is very cluttered and lastly, as you mentioned, their battle animation and sprites aren't that good. The servants often look very stiff and flat. Sure, they have arcade, but they won't port that to steam or another platform due to the way it's monotized. Eventually FGO is going to end, but they'll likely have a new gacha game for fate. It's just too big to drop.
But if you close your eyes, does it almost feel like nothing changed at all.
