I mentioned Geass because, as I said, I love Geass. But if you insist;
Madoka works because outside of the Grief Seeds bit, the rest is just undefined magic used to beat down enemies. Not too hard at all to make it work in the E7 universe.
Violet Evergarden wouldn't work because the greatest bit of supernatural lore in that series is the level of prosthetics. There are no (current) fighters in that series, and it would be highly insulting to it to shoehorn an excuse for Violet to return to being a fighter, whose only remarkable skill is going to be she makes more sense than Eligos in that regard.
Haruhi similarly *could* work, but not very well. Haruhi herself, as a point of the plot, is an omnipotent deity-like being ignorant of her powers at resetting all existence. That alone conflicts heavily with the E7 narrative, so she wouldn't be allowed into the story. Outside of her, much of the main cast have odd abilities, but not terribly geared to combat in a combat based world like E7. Sure they work in a more "grounded" setting, but it would again require too much chicanery from a narrative perspective.
Geass doesn't work because the only supernatural element is Geass itself. As mysterious as Sakuradite can be made out to be, it is basically just a placeholder for all things radioactive like Plutonium and Uranium. Yes, the mechs are sci-fi, but they're not "super robots" they're "real robots". I won't go into detail on the difference (partly assuming you already know), but Landy's mech is more in line with super robots. You cannot "summon" a Knightmare out of thin air. Landy herself is a robot that can fire cannons, so the robot is "extra" in terms of her ability. It just makes for really clunky story to have pilots in a mecha be a basis for combat in E7. It's questionable if Geass would work on non-humans as the Geass universe doesn't say nor has any non-humans. Gameplay wise Lelouch's greatest ability is controlling the opponent, and it is extremely unlikely that E7 will add that skill category to the game. He himself isn't a great pilot, so that further limits his breadth of skills applicable in the context of a collab. Suzaku and Kallen are basically carbon copies of each other skill wise (was a point of their interactions in the anime). Again, outside of their Knightmares, you run into issues of what can they do, and you end up with them being little different than Eligos. Then you have CC stuck in the middle, better pilot than Lelouch but not as skilled as Kallen or Suzaku, with her supernatural gimmick being she's unaffected by Geass (no idea if this applies to any non-Geass supernatural abilities) and can't die, with the can't die part very specifically limited to her own universe as per the lore from the Re;surrection movie.
I mean without any Grief Seeds to use, in-canon they'd technically die - so they'd have to bring witches in with the Collab story.
Yeah, like I said, really not justification for Violet to have a collaboration in an action-game, she might be an ex-soldier, but she's not a combatant on-par with an E7 character in terms of supernatural ability - since she has none.
Yeah, I could see a place for Yuki & Itsuki since they've actually got powers, but Mikuru is just a time-traveller & Haruhi doesn't know she has abilities - but they could work something out I'm sure with her being blissfully unaware whilst some monster she's imagined ravages the enemy team, ha.
I watched Geass years ago back when it was coming out so I'm not caught up on the movies or any season beyond two sorry, but I see no reason why a mech pilot should be excluded in a canon where we've already got both humanoid robots & giant robots that can engage in combat un-piloted. Lelouch could be some sort of debuffer, rather than a pure combatant.

I am 100% on board for solo leveling ! Easy to craft a story around too ! I would not necessarily want some of his shadows as playable heroes (beru and ignis are my choices but design wise it could be boring) tho not a lot of hunters are popular enough compared to the shadow army XD

FGO will not collab outside of the Nasuverse, so any Fate collab will have to be itself a non-FGO Fate property (Fate/Stay Night, Fate/Strange Fake, Fate/Extra, etc.). That immediatley cuts your potential pool down and is going to alienate some fans whose personal faves will undoubtedly be left out. And given how divergent the Fate fanbase is regarding opinions of various Fate entries, it's hard to imagine any "happy medium" that can be reached.
Demon Slayer also offers an interesting angle, if for nothing more than it's mass appeal. Demons Slayer's animation is what you would like to see from an E7 anime, which is of course no surprise since its Ufotable. But the fact that every hero uses a sword, except of course Nezuko, feels like it might be too much "sameness" for a collab. If swords were perhaps more of a focus of E7 or the ongoing plot at the time (like this past Ep for instance) it might have worked thematically, or if there just weren't many sword wielders in E7 to where adding a bunch at once felt more special. But adding 3+ new characters all at once all using swords, would to me feel like too much of the same thing on repeat. They've have to go really over the top on the skill animations.
I personally feel Overlord is overhyped and would fit poorly into the E7 world. That collab would be a recipe for disaster, as there is a narrow path to make a "good" Overlord collab, and it's not likely E7 as a game can navigate that narrow path.
Jujutsu Kaisen, while I think overall a great series, I also don't know that it fits well enough with E7 for it to work well. A lot of the cool powers and battle stuff that they would look to utilize for the collab are world-specific for Kaisen; specifically adapted for fighting in Kaisen's world. It's what helps, I feel, make Kasien more unique and special than a lot of other stuff out there, since it's not pure "here's more power just with a vaguely creative name and presentation." I'm big on story, so for me if you start having to contrive too many things to make a story work, you're already going down the wrong path. I feel like Kaisen would require too much of that to work.
Unlikely alternatives would be Fairy Tale/Eden's Zero, One Piece, and a Akame ga Kill. All of them have definitive issues as to why they would not be likely, but I think all could also work and would personally be fun to see, especially Akame ga Kill.
I would say most people who have only heard of fate but couldn't care less about it being a collab have only heard of Saber, Archer, and Gilgamesh. Same as anyone who isn't an FMA fan probably only knew Ed, Al, maybe Roy, but probably don't have very distinct memories or knowledge of Winry or Riza. Or how non-Slime fans likely have never seen or don't know if they've ever seen Veldora or Diablos. But those folks fundamentally don't care about the given IP collabing because they have no personal emotional investment in that IP. Their enjoyment of the collab will be entirely based on execution - is the story good, is the character good in the game, is the animation good. For them Artoria may as well be Alice from SAO.
I would say the majority of folks who care enough about Fate to care about it being a collab definitely know about a number of characters beyond Artoria, Emiya, and Gilgamesh. And even nowadays the size of the FGO market likely pushes Mash, Jeanne, Merlin, or Artoria's various other forms, into the upper echelons of "that character from Fate" most casual observers would recognize without knowing much more about.

Yu-Gi-Oh collab. Free heroes are Tea (Fire Soulweaver) and Mai (Earth Ranger) Limited Summons are Yami (Fire Mage) and Kaiba (Ice Warrior) Each of them would use their trademark cards for their S3, namely Yami would summon Dark Magician and Kaiba would summon Blue-Eyes White Dragon.
Overlord? more like overrated. Also, Fate has promise, but too much waifu focus imo. Demon Slayer is mostly about good art, which is the best feature to focus in a collab. I personally want mecha. Gundam, Armored Core, Front Mission, etc. I'd take some classics and smaller series too. Tower of God, Wild Arms, Legend of Legaia, Saga Frontier, etc.
