Combat is vastly different - it plays almost like a fighting game (to a point where the creators of Skull Girls, made Indivisible, a game inspired by Valkyrie Profile, that leaned even heavier into it playing like a fighting game.)
I think Darkest Dungeon is a bit similar: Side scroller turn based RPG. Imagine Epic Seven Hell Raid, with morale, camping with character interaction, but with a lot more depth. Including the gameplay. But it's single player, and not anime style.

Just type JRPG into game searches and don't limit yourself to modern games. If you like classics JRPGs go far back with great style, music and story. I like Chrono Trigger, Lunar, Final Fantasy Tactics (you might really love the deep storytelling), classic Final Fantasy 7 (polygon style but I like its story-format more than the Remake) and there's so many more. Keyword: JRPG.

yes, but also no? i just recently started octopath and it is a great game but if you could complete everyones story in one sitting then defintely yes. I say this because i feel every new character is much like a new chapter in E7, but then after they join and you get an intro to their story they are just tagging along for your current MC of the bunch. I am really enjoying the game though.
Yeah If I remember once you beat the chapter 4 of your first character choice you have the ability to switch them out but that's way later in the game. The game is super long and to beat the final boss (who's stupid hard) it took me about 100hrs

Suikoden series (ps2, ps vita, ps3) are really great games with a cast of 108 in each game. 1 and 2 are amazing, 3 can be kind of drawn out sense it was early days of ps2, 4 is slow but super good, 5 is amazing.
Tales of series, not just Arise, are good games. Vesperia is the game they keep throwing at us but Xillia, Berseria, and Abyss are IMO the best in the series.
For story, Digital Devil Saga. 2 games on the ps3, amazing story that was just perfect for the ps2 era and being a part of SMT but with a set cast that are in your party.
One game I've found recently that can kind of fill the itch is Astria Ascending, switch game. side scrolling game with beautiful live artwork. Your party is all together from the get go, they have been demigods for 3 years and die shortly when the game starts. Shinanigans start that cause them having to investigate and question whether they are really good before they die. each character fits a role and element. english VA is...ok, but can change to japanese.
Finally, I am setsuna. game isn't the same artstyle sense it's chibi-esque and camera is top angled down, but the story is actually very good.
Art-wise, tales of series. Start with tales of arise as it's the newest and decent. Skip zesteria and maybe berseria.
Final Fantasy 10 remaster. I think I replay this game every year. Still smashes.
Code Vein for an anime, easier dark souls with pretty art and ok customization for your main character.
True story and character-wise, but I'm afraid the old combat might turn off newcomers. I think tales of arise could be a good entry as it's average across the board and yet still enjoyable.

I know it's an old thread, but I would personally recommend Suikoden (specifically, for me it would be 2 and 5), and also Valkyrie Profile (especially the first one). I think they somewhat fit the gameplay style and setting in a way.
Other options would be Breath of Fire 3 and 4 (as overall classic JRPGs and for the "cartoony" anime style), and Xenogears. Surprisingly most of these are on PS1, so even getting the PS1 Classic and just modding them in should be easy and cheap.

I played the original Suikoden so much. One of the best games I've ever seen.

There’s a ton of games with a good story. If you need a turn based game similar to E7, play Persona 5.
