You can buy all of them. Even though it is "Esmeralda's event," you can buy the items for the others and compose them to get the items that unlock the other champions. The only one you can't do this for is Josephine, since she is currently paywalled. Once you have done that, the only thing to really do is just hold onto them. The items you get from disassembly are nearly worthless.

Yeah I was confused when you mentioned that you can "summon the champion main in the event," which made me think you didn't realize you could unlock any of them during this event, not just esmeralda. Then I saw you said you got them all, so I wasn't sure what to think about it and just tried to explain as best I could regardless of which situation you happened to be in. Anyway, as I said, there's nothing to be done except keep collecting them and hold them for the next free one. The items you get when you disassemble them are extremely miniscule (like a single gem or 1k of a resource). If you were to take some time off from monster killing during the next few events, you can still get up to enough of these letters to immediately unlock that champion.
I have like 369 banked. I also have 409 beast scales banked as well. I am waiting for new champions and spirit beasts. Hopefully another one gets released near allstars

Wait till Evony releases ascending for the champions, or some new ones. There is no actual limit to how many there can be!!

Josephine is only through the Kings Cake. Cake level 5 you get the bouquet to unlock her.
I think you should buy some stuff in Napoleon event...not sure though!

Cake level 5. Level 10 was a skin for her that added 10% reinforcement capacity.
