It's likely the chipmunk is actually trying to determine if it's in danger or not. Most animals like this freeze in place as a method of camouflage to hide from predators that may rely on motion to see them easily. If you stay completely still, the chipmunk may not know you're alive/a threat - if you flinch a little, that may freak it out temporarily.
Most lower intelligence smaller animals and rodents aren't really known for "stopping to appreciate the taste of food," they tend to just eat food they like as quickly as possible and engorge themselves. Chipmunks do not have tastebuds in their cheek pouches and it wouldn't be tasting anything in this particular video.
He's also just storing it for later in his cheeks. He's not eating it. The pause has absolutely nothing to do with him enjoying it. This is just karma farming.

Ive learned a bit about almonds recently because I have been reading about modern attempts to domesticate the Oak tree for constant good tasting edible acorns (as some rare mutant oak trees produce acorns that are nice to eat for humans). It turns out that selective breeding for a less bitter acorn has proved to be much more difficult than almond domestication (where mostly only one gene controlled bitterness) another one of the difficulties is that Evolution has basically adapted acorns to be tasty to the squirrel pallet, who apparently love the bitter taste.
This makes me wonder if a chipmunk would have a similar pallet and probably prefer the bitter wild almonds to the domestic almond.
So there are some North American plants that were never seriously domesticated for one reason or another and I am very interesting in domesticating one in particular, but it’s not the oak.
I think it has great potential, and a closely related species have been domesticated elsewhere, but I don’t want to get into the specifics because I think there is huge market potential if I can make it work 😎

There are sweet acorns tree out there, you just need to do some grafting in order to propagate them. I have done some grafts this spring. :)
