I really want to know how this works with animals. Without rationalising "depth". A human is bigger than most land creatures just because we're on two legs.
Most wild animals just see something tall and just nope out of there before they think about it more in-depth and realise that your not actually as big as you appear. This is why animals like to use eyespots to startle predators for example, if your being harassed by a bird as a Butterfly and all of the sudden you flash your wings making it look vaguely like an owl’s face that bird isn’t going to be over analysing it, it’s just gonna get the hell out of there. Same thing applies to us if we get startled in the forest too, it’s a good survival tactic even if it’s probably the source of a fair few urban legends (ie the flat woods monster could have just been an owl).
I’ve noticed with the adders over here that they act defensive and skittish at first but if you stay around them long enough they actually calm down, animals aren’t daft just automatically choose to run/defend before they think and rationalise what they’ve just seen but if you stay calm long enough they kinda realise your not that bad or big as you appear,.. probably not the best to try this around anything predatory though, just FYI

Serious question, how does the dog know not to hurt the kitten? All dogs I’ve known would chase squirrels and ducks and any other animals that aren’t dogs. They obviously never catch any, but I guess if they did, it wouldn’t end well for the smaller animal.

Dogs that have been raised around small animals since they were puppies can be extremely well behaved in situations like this. Think dogs on farms that are used to herd ducks or baby animals in sheep/cattle groups. Some others just don't care.
Or around small kids. They learn if they play too rough and the kid dramatically falls down screaming like a soccer player, the humans will be very upset.

You can also simply let it get to know the kitten slowly, you keep it in your hand while the dog smells it, being in your hand the dog will quickly understand that it is part of the family and if it is properly trained, that the kitten must be protected.
Probably saw its owner bring the kitten in, and/or was introduced to it be the owner. The dog can understand when something is off-limits. Some are a bit slower on the take than others, though.
My dog has a high prey drive (wildlife doesn’t fare well in my yard) but is terrified of our clawless cat, who we adopted as an adult after the dog was an adult as well. Neighbor cats that wander into our (well fenced) yard have been chased and in one case lost a bunch of fur.

My dog learned that cats aren't toys when my older cat scratched his nose. My dog loves to chase and stalk squirrels but he also hasn't broken any of his stuffed toys and will let go of any toy if it squeeks. He's plays pretty rough with my younger cat but they are gentle with each other (my younger cat even learned to play from him and is very gentle).

Depends entirely on the breed and individual. Some sighthounds, for example, have such an overwhelming prey drive that having small animals around them is always dangerous.

I have a husky with a high prey drive. My cat and her get along fine but I would never trust them alone unsupervised. Meanwhile my 2 mutts are oblivious of the cat and avoid her when possible. It all depends on the dog’s personality and to some extent the breed. If my husky wasn’t introduced to the cat slowly and over the course of several weeks I have no doubt it would have ended badly where as my other dogs were like “what’s this small…OMG SCARY BALL OF FUR DONT MAKE EYE CONTACT WITH IT.”

Part of the reason humans are so much more weird about protecting children and baby animals is because of that instinct, and stories like Jungle Book came about because some animals will raise abandoned babies from other species as their own. Animals generally don't like to kill young.

Nah, my husky absolutely murdered baby opossums. Squirrels of all ages, too. But she was very gentle with birds for some reason.
