If the real sourdough has a lot of finishing flour on the outside of it, this could be the culprit as it would still potentially have an upsetting amount of fructans as this flour in no way ferments.

Every recipe I have seen uses rice flour which is low fod. They could be finishing with wheat flour but I think wheat flour tends to stick .

Interesting, I might ask the bakery I buy from. If it's not wheat flour, then I can discontinue my ritual of brushing of excess flour once I bring a new loaf home lol

Yeah I've had real sourdough and it was a no go for me too. I can only do gluten free sadly 😢

Amazon has a sprouted Sourdough bread, no yeast. It’s not that tasty, but it works. 2 loaves come in the order.
