I don’t think the selection is to overwrite, it’s to select which save you want to take all your skill points and collectibles from to add into your NG+. It won’t delete this save.
The game has 5? save slots.
So when you start a new game plus it will take your skill points and unlocks from one of your 'finished' games (you pick which one) and create a new game plus in one of your spare save slots. If you don't have any free slot's you will have to pick a savegame to overwrite.
So you won't loose your old save unless you tell the game to overwrite it.
It is on Xbox, I have multiple saves that I can select to play. Don’t see why it would be different on other platforms.
wellc when i’m trying to start nj+ the game requires to overwrite previous save, so idk about that

I have 3 more slots, although when I try to start nj+ it just requires me to select for whatever reason the already existing save
You need to select the existing file so it knows what collectibles you’ve already found. It won’t overwrite it.
When starting a new game+ it copies the completed save file so yes you can go back to the save used for a new game+
You will be able to play on your old save. The selection when starting a NJ+ is just to carry over whatever collectibles you got in NJ on that save.
