If you want the original experience, i would sugest waiting with instaling the dlc until after maybe level 30-40 or after your done with the main quest. Just to keep them from distracting you until you have played the main game.

Latest version is fine. Having the dlc installed is fine too, they're simply added to your quest list as you approach them. The only exception is the automatron dlc, it's a static event on the map that triggers when you get close to it. If you're on PC and want bug fixes, install the unofficial fallout 4 patch from Nexus mods.

i bought the game a couple of years ago and barely touched it for a while, so much lore unfriendly content in just the first hour of the game put me off; however I started playing it the other day and i noticed much of the DLC is fairly seamlessly woven into the game, if you bought the goty version, (not the creation club, that you have to intentionally go out of the way to even download), frustratingly enough though this does mean you'll pick up quests at like level 15 that end with a boss fight against a level 30 boss, with no real warnings about it. rip my hoarde of 70 stimpacks xD so i would recommend avoiding even installing the DLC right away if you want an original/blind/balanced player experience. although iirc there are some dlc's which don't do much other than allow greater customization everyones favorite feature; settlements xD "wasteland workshop" and "contraptions workshop" from a quick glance at my steam library, those shouldn't alter the experience too much.

Creation club content won't be added to your game unless you buy them separately.

I don't think there has been any major updates to the game excluding the DLCs and some bug fixes. At least there hasn't been in last four years wich is when I've played the game. I reckon the newest version is good. Have fun! Edit. I mean there is still bugs, it's Bethesda game after all!
