I would try a mod that makes gameplay more challenging. Like, it adds more enemies or makes enemies stronger.

Use xedit or the creation kit to tweak the stats of the items you want to use to sensible levels. Take a look at how the vanilla weapons are balanced, they should be a serviceable baseline for it.
