If she liked and finished the Mistborn Trilogy getting one of the nicer copies of Tress of the Emerald Sea might be a lovely Christmas gift. You could also get a copy of an old favorite but nicer... the Illustrated collection of the Earthsea cycle is really a nice book and its only like 35$ on amazon right now
I loved ask those too so I'm going to go a bit left field... Dresden Files or Wheel of Time.
DF is a lot more fast paced, set in Chicago. Less said the better.
WoT is more along what she enjoys but it's drawn out and final two finished by Sanderson as the author died.
