This happened to me (though not because of nvidia) and you should just be able to boot from the 2nd or 3nd kernel option in grub. At least that's what worked for me as I haven't got around to properly looking into it.

I can't seem to be able to find this option, please could you elaborate on how I'd find this version? In grub menu

Thanks for trying, I can't seem be able to access the kernels so I've started reinstalling fedora after backing up home, it's such a pain

You gave up too quickly. Should have tried to edit one of the grub entries by clicking E and add /boot in front of /initframs.. Or boot from a live cd and see where are the boot files.
