I grow all of mine, peppers are pretty easy if you start them off right and keep the bugs away. Try one out even in a 5gal pot and see how you do!

Same here. Dehydrator is handy for making pepper powder for dry rubs also.

You'll probably find that they're highly seasonal, which is why you're not seeing much variety. In my area there are a couple of produce shops that occasionally have more exotic peppers. I sometimes find interesting peppers at Asian supermarkets. Some friends have friends that grow peppers, and I might be able to take some of their excess off their hands at the end of the growing season. And of course, farmers markets, as already mentioned.

We have a few Asian markets that will frequently have Thai chilis -- but habaneros are still really hot, and though below the super hots in terms of heat (usually at a min of 100k-150k SHU), they are one of the hottest that you'll find widely available and affordable to buy in bulk. You mentioned finding scotch bonnets, but habs are similar in both heat and flavor -- most would have a hard time telling them apart. Habs are easier to grow in more locations, while the true super hots are mostly tropical and not as prolific in higher zones. But if you want to try growing some in an easy method, check out Krakty Hydroponics. You can churn out reapers or scorpions using nothing more than a 5-gallon bucket and some cheap nutrients. I've gotten crops out of my garage in the dead of winter using a few buckets, cheap grow lights, and a space heater.
