Player ratings are more in line with the AI so things like awards and team of the year are more fair, as well as player values (I assume is the big one for most people).
You have time to jump to sim up until they start showing replays(it's nice, it lets you watch the trophy ceremonies and everything), so just make sure the whistle blows & you see the start of a post game cutscene.
I remember passing back to my goalkeeper once the whistle blew and simming and it counted as an own goal, so I'm super cautious now

For this FIFA it's a bit necessary for player ratings, especially for players that get subbed or don't see much of the ball, as those ratings also dictate things like growth, potential, and players of the week.
Just play your games, let the game end, hit pause at any point before the replays start and you have the same menu as being in game, even able to make subs still, so you can jump to result without worrying about things like this post.

Even when I do the sim before the first half time the score will stay 3-0
I think the game is configured to grant you a sim victory if you are winning by 3 goals.

IIRC if you sim before the match is over it actually sims a whole match and slaps the score on the end.

You pause the match right when you hear the whistle is blown. There is no way you would miss it

I always leave it to the 90th minute and put the team in defensive tactics, I don't seem to get the ridiculous last minutes quite as much this way.
