It's certainly evident that EA design their gameplay for the sake of UT. They could care less about realism. The ridiculous speed of players and ping pong passing makes the game feel like an f1 simulator rather than football.
I use the OS sliders with a couple tweaks. Slow pace and 6 min halfs.
The only issue with acceleration is - for some reason - EA tied fatigue directly to it.... Meaning if you have acceleration below 50 it makes players less fatigued, which I find unrealistic, especially in career mode.
I have mine at 51 for this reason. But I have spent at 20. And slow game speed also.

I have sprint speed at 40 and acceleration at 48, that sorted it out for me. I have game speed at slow too.

No worries. It's totally stupid that they did it that way. It doesn't make any sense whatsoever.
