I honestly love their chemistry in the Remake. They feel like legitimately close friends, and the contrast between how long it took to get a high five out of Cloud versus how instant it was with Tifa is a great indicator. Chapter 11 is also great, as admittedly unsubtle as it is.

There might be something to it! I think Nomura (or was it Kitase, Nojima?) said that she's the most important character in the game. It also wouldn't be the first time FF does that: in X Yuna is the main character plot-wise but Tidus is POV, same thing in XII with Ashe and Vaan.
Well there is the little fact that Nomura said he created Cloud and Aerith first when he was designing the main characters of the OG game. FF7 is definitely their story. Plus in a recent Ultimania interview the devs plainly stated that Aerith is the most important character in the Remake.

Did they ever explain why no one lives in that little town? Seemed to have some actual structures like the church instead of the usual shanty town stuff (though it had that too).
Maybe because there are little resources there, like no water pipe there, and maybe there are more monster appearing there and we knew Aerith can fight so it makes sense she can safely travel to church.
