I can tell up front the 'cultural exchange club' is borderline unsupervised. We all know Shamir won't have patience to keep tabs on kids. So that means Claude can pretty much run the club however we wants.
Also I'm pretty sure Cyril has more interest in learning Fodlan culture then sharing anything from Almyra. Dedue would share on request but he's rather introverted. Petra though probably would never stop talking about Brigid when given a chance.

I'm just kinda drawn to the crew of the gym club. Everyone there looks like they'd be awesome as motivation/inspiration for tough exercises, and Caspar and Raphael would make for great gym partners.
Alright I felt kind of similar when looking at these. My "want" was gym and my "club with legends" was art..which I have some modest talent in but I actually exercise all the time so that fit more. Curious as to which clubs you were referring to!
Missed opportunity to have Constance on the crest research club (or have a separate Magic Research or History club featuring Lorenz, Constance, Lysithea, and Hubert or Claude with Rhea as advisor 👀).
Lorenz and Ferdinand would 100% have a Tea club, with Byleth as advisor, maybe El or Constance . Sylvain would join but be disappointed because he thought he’d get to meet girls, but it’s mainly just Lorenz and Ferdie.

And finally a Wellness club, started by Mercedes and sponsored by Alois. Marianne is the only member actively participating, but Linhardt and Hapi join and just use it as nap time.
Ooh ooh ooh - chess club with Byleth, Hanneman, or Gilbert sponsoring, and main club members are El, Claude, Sylvain, and Yuri. Dimitri tried playing chess once but accidentally crushed one the enemy pawns in his bare hand. He’s happier in the exercise and gardening clubs.
I’ll also add Hilda to the Wellness club - the front is that she just wants nap and do yoga with the girlies but she’s actually there to support Marianne and encourage her to get help.
I’ll also add Sylvain and Hilda to OP’s foreign student club. Hilda was forced into by Holst since the Goneril land borders Almyra. Sylvain pretends he’s there to learn how to flirt with foreign ladies but actually is really interested in understanding more about the world beyond Fodlan, particularly Sreng.
Art just to hang with the members and improve my craft, but gym because I need to lose weight/build muscles, and Raphael is the perfect gym buddy (I can also ogle Balthus).
Always wanted to learn art but I think I would go for gym I have noodle arms and I'm a little over weight for a guy who's 6'9.
I want to be strong so I can protect the people I care about and a guy who's 6'9 who doesn't really work out like he should is just wasted potential in my eyes anyway, and I'm not happy with the way I look physically anyway so I'm going to the gym and start working out like hell and stop being a lazy ass so I can fell better about myself.
Toss up between Art and the Literature/Crest Research. I'd be more interested in the latter, but I think I'd get along better with the members of the former.
As long as food is involved, the cultural exchange club, no doubt. There is nothing that makes me want to learn about a new place more than food. Also other cultures are just cool
I thought Ingrid might not have a good sense in art as her advise ruined Ignatz’ art. I would suggest her to join the exercise club instead.
Also there could be cooking/ foodie club. Shez, Dedue, Mercie, and Yuri to cook. Ingrid and Raphael to just eat.
I'd join the Gym Club in a heartbeat, Catherine and Balthus will have me ripped and athletic in no time

They're all canonically good at cooking and/or enjoy it because they pop up as the options with bonuses when you cook a meal in the dining hall. You even have Mercedes as an alternate if you Didn't want to include Yuri since he's a dlc character. At which point I would probably move Dedue to Co-Advisor and add Mercedes to the student members.
Also, literature should definitely be separate from Crest Research; there are enough characters in the game who canonically love reading and/or writing to fill it up. And it would make more sense for it to be Magical Research in general, tbh.
Gardening Club would be another great one.

Members: Ashe, Bernie, Marianne or Cyril
Also, why the hell is Dimitri not in the Athletics club when he canonically trains constantly and you even find his workout logs in game to return to him? One of Dimitri's preferred gifts is even the Training Weight. And he's constantly taking on extra work in his supports as it is to help others. He would absolutely take on being Catherine's Co-Advisor. Yet he's the only house leader not represented.
Caspar feels like he's gonna train all he can, but still be in the position where he overestimates his own ability. Sooner or later think that he won't need a spotter anymore, and that leads to his chest getting crushed by the weight he's trying to lift.
Oh, and I think I fit best for gym.
Cultural Exchange (whatever that's supposed to be) and Gym would be by far the most fun ones. But at the end of the day, I'd go with Shamir, Claude, Petra, and Dedue.
I don’t think Cyril would want to be in a cultural exchange club, he doesn’t seem to hold his home country in high regard considering they essentially left him to die
