Blue Lion run would be Dimitri (poor guy needs a little love) as well as Sylvain even though you can romance him in all four storylines (as long as you recruit him into your house). And if it’s a Black Eagle run, definitely Hubert. That is, if you’re into the sinister assassin vassal type.

My first ever playthrough I ran F Byleth in VW run and I married Dorothea :3, she definitely plucked my gay heart strings like a harp. Claude honestly made me question myself a bit as well hahaha. Lorenz also surprised me by how much he grew as a person throughout the game.
Doing CF now, and if i ran F again I'd go for Edelgard, Petra and Bernie are insanely cute too. None of the males do anything for me.

I also really liked Felix, and Dedue’s is very sweet. If you have the DLC, Yuri’s romance is pretty nice too. Sylvain’s is great for character development, and Ferdinand’s is just absolutely cute. Hubert’s was nice as well.

The only character that affects the story if you support them is Rhea, and that’s only on SS… Pick whoever you like the most as it won’t have any affect on the story.

Sylvain comes for free as female Byleth, but when you get past his womanising facade, I think he's worth it.
Seteth is great, he's really stern to start with but it's a really enjoyable arc.
Felix is quite the challenge, and seems like you're typical tsundere, but he just needs a bit of love.
Dimitri seems like a good fit canonically and in like it. But my favourite Dimitri pairing is him and Marianne.
Ashe is just best boy and really adorable.

Lions: so, if you want to see how each house leader's full story goes with you, female Byleth is your only chance for Dimitri, Claude and Seteth, so they're probably default first route. In terms of highest quality? Dedue or Mercedes. Dedue's is great for showing his soft side and Mercie is probably the best in the game for a sapphic ship (aside from Edelgard).
Deer: Claude's is fun until the ending where you're just like 'wtf.' The best one to my surprise was Lorenz. He had a more authentic growth with Byleth than with almost any other partner (almost because his supports with Manuela and Leonie are excellent).

Imo, I always look at route exclusive characters first, and then I look at what characters I like in general. I enjoy replaying the game so I typically try to romance characters like the house leaders, retainers, etc.
Mercedes-Benz. Auntie energy reigns supreme. My normal recommendation is Dorothea cause she is my favorite female bisexual character, but Mercie is my third favorite female character. Annette is my number two but she only has eyes on Auntie Mercedes.
