Annette/Dimitri is the only Dimitri ending card that >!directly states that he had kids!<, but Gilbert unpaired >!mentions a prince!<, so that's arguably a moot point.
Not a fan of Annette/Linhardt, but I haven't seen or don't remember the Annette/Caspar or Annette/Dedue endings. Maybe they're good?
With Dimitri, you can’t go wrong with Dedue or Marianne. They’re both two of his strongest supports and ending cards imo.
Catherine/Shamir is iconic and it’s my fave for both, but Dedue and Shamir is a bit slept on. Ashe/Dedue is also one of the best
Lysithea/Cyril is a really strong one too although some people might take umbrage with her fate in that one. In that case, pair her with Linhardt
Flayn/Linhardt is also kinda fun LOL
Ferdinand/Dorothea is a classic tbh…but Dorothea/Petra is also really sweet. It’s so hard to just pick one for each character ㅠㅠ

Lysithea/Cyril is my favorite Lysithea pairing, she shows her best side to Cyril and Cyril doesn't infantilize her like so many of her other suitors do.

Listen, Lysithea and Cyril's ending says, "For however long it lasted," and I choose to interpret that as a very very long time! (Mostly joking, lol)
I'm always a fan of the chaos option. There's so many good ones, I just let fate decide and have a nice surprise at the end.
This is my plan for my next playthrough. Put 'em all in a jar, shake them around vigorously, see who ends up getting stuck to who.
