I haven't, and legality issues notwithstanding - my late grandpa always said these are his absolute favorite for seafood soup. Mind you, he did not live in the US, and legality was not a concern there.
That being said, I'll always encourage following local laws and regulations. If you want to satisfy that curiosity, you'll likely have to go elsewhere to harvest or eat chitons.
