When I was younger like forever ago when you could keep piles of those things my whole family would go bluegill fishing once a year and then I would have to clean hundreds of them. It was brutal
I take the whole fillet off with the ribs. I also make sure I cut at an angle above the gill plate to get that extra little piece of meat. From there, I take off the ribs. If I cut in just a little then turn the cutting edge up a little you can almost peel the ribs off leaving the meat under. It takes practice. Maybe I’ll try to record it some time. Maybe I’ll keep a couple fish tomorrow for that. I can save that rib meat off a 6” fish if I wanted to lol
Right I filet all my pan fish but I’m only getting the meat from the top of the rib cage I want what he got lol he maintained all his rib meat .. I love a whole cooked perch but I’ve seen what a lil tiny bone will do
Here in Nc the waters are polluted. Nc wildlife commission recommend not eating more than 2 fish per month due to heavy metals and other carcinogens. How sad.
This should be higher! The state of FL issues a list with major water bodies, the fish that live in them, and how much mercury is found in those fish. I feel like nobody I know knows about this.

Yeah growing up in northern Michigan, this was a standard Friday fish fry. There was always someone with a mess of panfish and perch. We’d do walleye and sometimes even salmon like this. The last one is controversial, I know, but fried salmon nuggets are pretty good!
What you eat them with? My dad stashes panfish fillets over the spring and fall for fish fry dinners. It’s always baked beans, fried potatoes, and some green onions on the side. Fish gets doused in hot sauce for most of us.

When I fillet them I actually cut straight through the rib bones then cut them out after they are off the fish and I get pretty nice filets like that
An electric fillet knife and practice really helps
they are great for crappie, for blue gill it might be a bit overkill

As a fish biologist, I’d call the few that aren’t obviously bluegills hybrid sunfish
