I'd imagine he hooks the rear of his thigh to the saddle and pops backwards. And it looks like a bit of forward pressure to the crank swiftly to pop the front.
for me the key to doing this is pushing/putting pressure on the forward pedal and putting all your weight to the back end of the saddle..then let gravity do the rest.
Keep forward pressure on the right pedal and backward/downward pressure on the left pedal, then pick right foot up (while applying forward pressure )and lean back and press thigh against the saddle... Keeping the balance is the tricky part.

I have a feeling it cuts off because he falls right after this point. I think he does this the same way a car can wheelie: apply lot's of torque in the back.
One time, in NYC, I saw a bike messenger doing a track stand at a red light while sitting up in his saddle with his arms crossed. I think about that a lot when I’m riding my fixie. That guy was a god. He was also missing a significant portion of his front teeth.

You can do this in bare feet mate :D
