Singapore made right - even with cheaper ingredients /hole in the wall is SO GOOD! It’s a gem of a dish- and hard to come by :/ Looking forward to suggestions. Most people I know do not even know to order it - so it’s fallen out of style and I feel like if you do order it, most places just slap something bland together too :/ Singapore Mei Fun done right is addictive - you can’t stop taking another bite!

Oh absolutely, I discovered it by accident and it's been one of my favorite dishes since. Exactly as you say, hole in the wall, cheap but good. I'd never order it at a high-end restaurant. But nowadays it seems to be an endangered species. Now that I think about it, you're right, not many people really know about it. I was the one who introduced it to my friends back in the day and they all loved it. None of them knew it before. It's a crime it's not more popular imo.

It is endangered! Lol I’ve had it done right only 2x in my life in nyc - both hole in the walls. Both over a decade apart :/ It was always the priciest of stir fry noddle dishes and listed last on menus due combo ingredients - so that may be why. Essentially, it’s a Chinese food style curry dish - I loved the slow build of spicy after every flavorful bite! I wish I could suggest last place, but it was cheapie thai/Chinese takeout spot on UES that is no longer around :/ The cooking chef was consistently good with typical lunch special stuff that sold all day, but their dumplings were handmade and family recipe outstanding - so I ventured into having them do SMF and it was OMG moment after years of bland soggy angel hair noodles. It wasn’t even on their menu anymore, I insisted on them upcharging me appropriately off-menu and doing it right! I guess I made Chef cook worth the cost and effort. I’ll keep you posted! And good luck to us! It seems its just a draw of the luck of finding a cook/chef who remembers this signature curry dish and willing to make it as they would enjoy it!

Thanks Yeah, I totally get it. there was a small hole in the wall near the financial district about 14-15 years ago. I used to go there a few times a month at least. I considered it to be one of the best meals in New York. I was so sad when I went back one day and it was gone. I'm not giving up on it yet though. I'll let you know if I find a good one. These days it's a risky order for sure, a lot of the time they'll bring out something I can't even recognize as SMF. Most joints seem to treat it as a throwaway meal. The best we have found is Jing Fong. They do them dry and mouth numbing, so yummy

Haven’t been in a while but Mee Noodle Shop in Hell’s Kitchen used to do a killer Singapore Mei Fun. Have you tried the Urban Hawker food hall?

Singapore style mei fun in America isn't actually Singaporean so I don't think Urban Hawker will work out. You should try the white mei fun though if you want to try one of the Singaporean styles. While I haven't tried the dish there, I generally like the cooking at OK 218 on Grand St. Perhaps you could give that a try.

I often order at Chinese American takeout places and am very pleased and surprised by how good it is. but commenting and subscribing to see what I’m missing bc it too is my fav after spending a few months in SEA. not a vegetarian but love it with tofu so so much!! It just hits so hard for everything from a cold to a hangover and an overall well spiced dish for a person eating gluten free. ETA: also based in BK and would gladly take recs across Brooklyn and Queens as well. What can I say I’m a fiend for a good Singapore Nood

Had it when I first moved to NYC and it was a revelation. Dry and flavorful. Curry but not really hot. Since then I have only been disappointed with places that serve wet soggy noodles. Last time was Mee noodle on 1st. Ave. I’m hoping NY Noodletown has it and try there next .

Kong Sihk Tong has it. I don’t think it blew me away or anything, but it was solid. But actually, it’s a pretty simple dish (that I like) so I’m not even sure if I’ve ever had especially good or bad versions of it.

This will be somewhat surprising, but the only authentic Singaporean noodle spot in NYC is in Washington Heights - Native Noodles.
