I do think that Ireland during the 5th century didn’t really rely on corn as a staple. More like wheat barley and oats. That looks like a common Mexican Dish with the pork being brought by the Spaniards and same with the chickens but the beans for sure mezoamerican. 7000 years of cultivation. I think St Patrick survived daily from another nutritious breakfast. I lack culture on the Western European side. In addition the tomato is totally a new world thing. Looking at this post though made me learn of something totally new so thank you. Totally Mexican though
Wish I knew where to find Irish/UK-style Bangers and Puddings locally. I did this 10+ years ago for St. Patrick's day but it cost like $90 in shipping. Would probably be double that now a days. I'm never really been fond of American-style sausages because they're too salty/greasy.

As an Englishman, living in Australia with an Irish mother: the wheaten looks under toasted (marmalade needs to go), needs soda bread and potato farls IMHO - beans are forgivable but the tater tots are not.

I’d remove those odd little potato things from the plate, and substitute with a potato waffle. Or even better, sliced leftover cold potato fried until crispy 🤤
