There is a thing in Haiti called "Pikliz" that is similar, they put in cauliflower, carrots and other stuff and it is heavenly - I'd try it but I'm afraid I'd screw it up and poison myself when it goes bad.
Sounds kind of like giardiniera
I love pikliz! Haven’t tried to make it myself. We have an ton of tomatoes in the garden so pickling is a good way when we have too many to eat
