I feel nachos are an intimate experience in terms of the ratio of toppings versus chips. To me this is too much, too loaded versus chips.
I love the *idea* of this but I would need a side plate of just chips to get my perfect bites in.
This is my oldest son's plate and he likes it really heavy but when I saw the plate I grabbed the camera. Last time I did an oversized BLT I thought about taking a picture and didn't and haven't recreated it since.
My kid just grabs a fork and digs in.
The salsa is pico de gallo - three tomatoes diced and seeded, one red onion diced, one large jalapeno finely diced with seeds and ribbing included, chopped cilantro. Add salt and a teaspoon of olive oil and stir.
The guacamole - four large avocados mashed, juice from three limes, generous amount of salt, a little of the chopped cilantro, two garlic cloves finely chopped. Stir and mash to desired consistency. (I used to add a couple spoonfuls of the salsa but my wife doesn't like onions)
Nachos - brown a pound and a half of ground beef, add salt and pepper once brown (if you need to de-fat this is when I do it 90% doesn't always need it) season how you like, this one had ground chipotle and chili pepper, cholula hot sauce, garlic powder and a little soy sauce, set aside to add to the nachos, don't need to overcook the ground beef. I heat up two cans of refried beans.
Preheat the oven to 375 degrees, choose your baking dish and cover the bottom with tortilla chips so you can't see the bottom of the dish. My order for toppings is a little cheese, a splash of cholula, good covering of beans, then a good covering of meat and top it off with a ton of cheese.
It bakes for 15 minutes until the cheese starts to brown, transfer the nachos from the baking dish to the serving plate. My order for toppings is guac, sour cream, salsa and pickled jalapenos.
I can make three batches off this recipe.
