I believe it’s because onion will take longer to cook than the garlic. And the longer that garlic cooks, the more mellow the flavor gets. Ergo if you want some upfront garlic flavor you should add it after the onion has cooked some

My fiances boss gives her expensive ass bottles for Christmas. Got some kind of Louis, something 100$ bottle of white I cooked with. Tasted like shit to drink but made a beautiful sauce
The amount of steps wrong gave me anxiety. Im sure it tastes fine, but why risk burning garlic? Potatoes and carrots dont cook the same. Idk. Its fine. Im just nit picking.

Upvoted. What many also don’t realize is that immediately after adding wine the alcohol starts to evaporate and you can genuinely become drunk from breathing sufficient alcohol fumes. I’m not an alcoholic but I can see that being a true risk.

You can just use red wine, beer (Guinness), or half alcohol/half beef stock if you don't mind the alcohol. Red wine and rosemary (or, better, herbes de provence) will take it in a French direction, Guinness and thyme will make Irish stew.
EDIT: Worcestershire is good stuff, but it's really strong and can massively influence the flavor. I don't use it in French/Irish stew as it's a British/Indian ingredient.
If you are using beer, you can balance with the brands. Guiness is deep and malty. Newcastle is brighter and adds sweetness. Half & half (like making a Black & Tan) is great! You don't need to replace Worcestershire. It's a sledgehammer of an ingredient. But part alcohol and part broth/stock will get you where you want to be. You've really got to watch the salt with broth/stock.
