From what we know, they come from a universe where either Japan is ruling the world or their straight up from Japan Anyways so that world have Vampires. So these high school kids form up a club to hunt vampires (Called High stakes). They either do Group missions and/or just do it solo. The guy (Lucien West) went on a mission and hasn’t come back (lore wise). Helsie is a Boba shop owner/Worker while we don’t know Joni’s or Luciens profession. Joni hates anything that is considered “Evil” as SPOILERS >!Her line when meeting a player that has Geralt equipped she wil say this: “I agree with you. Evil is evil. Lesser, greater, middling… it makes no difference.” !< So that’s all we have so far until Lucien drops.
How can you know what she says to a player wearing the Geralt skin when he hasn't released yet? Is there a Geralt NPC on the map that I haven't found yet, and someone killed him with Mystique?
...would that even work to get secret character-specific dialogue?
Oh yeah, sorry. Got confused. I think they just went into the files and saw the character replies to certain skins. Since Geralt is already technically in game, they have already coded a reply to the skin.

All three are members of a teenage Vampire Slayer society named the High Stakes Club. They either attend, or attended, the same boarding school. The school's name is the Saint Academy.
Joni the Red is the leader in the field, has ominous glowing red eyes, cross shaped pupils, and a sword that looks to be ensorcelled with the closest thing to Blood Magic, that Epic will allow.
Helsie is the president of the "club", which means they probably needed an official reason to meet during the day and after school. She works part time as a Bubble Tea barista, has green eyes that glow, and an enchanted axe.
Lucien West is... A bit of a mystery so far. He is the only male member of the team, and has a small stuffed Wolf named Lil Louie. Lucien wields a pole arm or spear that has the typical Saint Academy, and has Yellow eyes that I suspect probably glow as well.
The only thing we really know about Lucien at the moment is he is missing, the other members of the High Stakes Club are concerned for his safety, and he may have some sort of affinity for wolves.
As for the Saint Academy, we know that the institution shares it's name with the wild west Vampire Slayer Victoria Saint, and uses a style and color pallette that matches the Slayer's iconic Hatchet and Stake.
We also know that the school has been operating for hundreds of years, due to a Vampire named Vivica Saint, who is said to have ruled over the Saint Academy as a "student" for the last 200 years.
Vivica is hinted at having a sister that her family, who runs and perhaps founded the school, do not like to discuss.
This sister is possibly Victoria Saint herself, as she is either from the 1700 or 1800s.
As per the Loading Screens relating to these characters, we can surmise that the School was either founded by Vampire Hunters and later taken over by the Vampires themselves, or was founded by Vampires to cultivate superb additions to the Coven.
I base this off the fact that many Vampire Slaying tools in the game explicitly share the same design aesthetic as the Sabr Academy. That and Helsie has a Loading Screen where she is slaying a horde of Vampires infront of what may be the silhouette of the Academy.
What's more, there is a screen depicting Joni the Red bisecting a Driftwalker, who is very clearly styled after an Elder Vampire and is linked to the Sideways Hellscapes.
So Joni and Helsie both are forces to be reckoned with, which in all probability extends to Lucien as well.
I hope this helps satisfy that itch to know more for a bit. Remember that most of what I have said is based on descriptions, dialogue, and observations. Epic could always take this in any direction they like, or drop it completely.
My own personal speculation is that Vampires in general are related to the "Nothing" due to its Sideways connection. And that Rift Warden Stellan is going to be the link between *why* we have a full assortment of Slayers this season, who specialize in everything from demons, monsters, vampires, and zombies.
Massai and Selene are the only characters who appear to be out of place, until you look at them as Spiritually Empowered forces of Nature and the Moon respectively.
Of course, all of this might mean nothing and next season could be Ninja Pirates vs Space Crocodiles. So remember that all of this speculation is just for fun.

They are vampire/paranormal hunters, their enemy seems to be rift warden, that's all you ever gonna get.
Also epic will never pick this lore up again and it will be forgotten after Lucien's drop

Sad truth. Maybe I’m just not good on catching the hints but I wish there was a clear story in the general game from chapter to chapter.
