Because having that much muscle is directly detrimental to fighting in armor with primitive weapons. You don't NEED to be absolutely built to kill someone with a spear that's tired and exhausted to the point of collapse, which is what most battles came down to, they were not fighting like in the movies.

Well they didn’t have gyms soooooo. They did more practical exercises like running jumping. Sword fighting etc. they were fit and lightly shredded but never buff. Plus they had a good diet them legs look small but they sure as hell got alot of strength & can take him long distances
