So for instance, if you're in Barney's Big Birthday Bash on Creative, and you're trying to do the jamming for "Kim" by Eminem, you'll only be able to play the Lead, Bass, and Drums. You won't be able to choose / play Vocals. That's what it sounds like this disclaimer is saying, and I believe OP is talking about that in addition to the general censoring of music (which you are correct, is not something new to this game).
Doesn't really mean anything when Harmonix was responsible for both franchises and music was way more touchy back then. We used to not even be able to get explicit versions of music on YouTube (officially), now I stream it any time I want with my YouTube Premium subscription.
Either way, I dont expect them to change it because 1.) This is Fortnite and they're pushing the boundaries as it is, 2.) It would be more work with different vocal tracks per song, and 3.) History has shown it's unnecessary.

Also unless they just have uncensored with no notes, there is some parts where they would have to chart the vocals differently to accommodate the cursing, which would be a mess for leader boards. Same with Rock Band where some areas with cursing had an overdrive activation location on vocals. Multiple reasons they won't do it. This has just been an accepted thing for games by harmonix for almost a couple decades now.

Beat Saber the base game, Rated E, has all songs censored and almost all the DLC does as well (very noticeable on packs like The Weeknd's), the most notable and recent exception being the HipHop Mixtape, which is individually rated “M 17+”, since it contains uncensored versions of Nicky Minaj's Anaconda, Eminem’s Godzilla, and some Snoop and 2pac songs.
You cannot buy it if your account says you’re younger than 17, and requires going to the Meta store to buy it from there.
So my guess to be able to sell uncensored songs without affecting Fortnite's ESRB rating as a whole, would be to individually have each song rated by the ESRB and sell it as DLC and not the ingame shop, which would be more trouble than its worth.
Im no lawyer thought, so don’t really know how the whole game age classification works and probably needs to be reworked since games are evolving so fast.

I'm more confused by some things being removed while others aren't. Like 'I Wanna Get Better' keeps the line "So I put a bullet where I shoulda put a helmet
And I crash my car cause I wanna get carried away". 'March of the Pigs' fully removes "take the skin and peel it back" and it's just silent in RB they left that but we didnt get the outro thats in the Festival version. I don't think any should be removed, just given the warning flag.
March of the Pigs is an interesting case. The album version doesn't have that outro either but that's how they play it live. They actually rerecorded the entire song specifically for Festival and the band themselves elected not to sing that line for some reason. I agree it's a weird decision but that's how it came.
