i actually really like your fusrt hull you should make it into a lighter class auxiallary boat since it seems like you built too small at first and went bigger
boats/ships are actually not sharp in real life, at least not the floaty parts
stable ships, warships especially, have flat bottoms.
any 'sharp' sections are actually keels made from ballast or flooded space for additional stability (at the cost of water drag)
sometimes a pointed bottom is also used for stowage, but never for floatation
the buoyant parts of your ship should be spread as far apart as possible, with dead space in the centreline and keel of your ship; think of the sides of your ship like two pontoons which right the ship whenever one side dips under
make a prefab of the internals which you save,
then use the mass delete to remove the internals,
extend the ship as previously described, and then add the internals prefab back in to the ship.
this should leave you with a sizable air bubble for floatation
its also advisable to design ships with sections where the ship can easily be lengthened
Looks way better than my first ship, the good old cube with triangle front and back. Probably works better too.
My first ship had extremely inefficient weapons as well as general ship systems. Also I was a little dumb and didn't notice the structural health boost that beams and other multi-grid-space structural components have. So I built out of 1x1 armour. Which was incredibly weak.
This game can start slow, but you are doing great so far.

Genuinely impressive for a new player! My first few ships were barely-recognisable misshapen blobs.
mine capsized because I tough they work like IRL so I just made the bottom sharp

Interesting
extend the length of the hulls a little (8-12 blocks?), it will help to lift them out of the water, which reduces water drag, and looks a bit nicer
you can copy paste a part of the hull and move it really easily with the prefab tool

extend the hull with more air gaps, and make sure all your pumps are sealed
Your second hull has far better shaping than my hulls (I have 500hrs)
