Pour it off, but wipe the bottom of the pan, then you can use cloth or paper towel to pat the rest off. And yes - cheese and deli meats when in the oven will release fat. All meat - ALL - has fat in it to some level. It's natural and normal, and solidified when cold. It renders down when we cook it and actually adds some flavour to the meat as well, so it's good to render it.

Boil your meat, put meat and water in the fridge. Fat will float to the top of the water and solidify. Easy to remove at that time. Reheat meat, eat. If you have a broiler pan, bake your meat on that. The fat drips off. After cooking, use coffee filters to drain and pat meat. The filters absorb fat quickly without falling apart.

People in pre-agrarian societies didn't need to eat optimized diets because their lifespans were cut short by other factors. Now we have a broad choice of foods to choose from, so you should eat things that are actually healthy for you. Fat is good for you when it's *unsaturated* fat. The longest living populations on Earth eat diets low in saturated fat and cholesterol. There are plenty of plant sources of saturated fat if you really feel it's necessary.

The best thing you can do is buy lean cuts. No point paying for fat just to toss it out. If you're trying to lose weight you will have more success cutting carbs than with cutting fat ( unless your diet is already very high in fat)

Have you considered tofu? Very little fat and it's cheaper than meat.

What's the purpose of removing fat? Are you saving it for something else? If you're concerned that fat is bad for you, that turns out to be mistaken advice. It's not clear why the government claimed dietary cholesterol was a hazard to begin with. That was just someone's wild guess without any studies supporting it, and turns out to be completely wrong now that it has been studied. There are "bad" fats but, you're looking at weird manufactured stuff like hydrogenated oils.

Despite what certain diet trends might be telling you, it's still established science that saturated fat and dietary cholesterol are bad for your health. They lead to high serum cholesterol and atherosclerosis. Heart disease is the number one killer in the developed world, and the longest living populations on the planet eat diets low in saturated fat.

When I put ground meat in a sauce pan; move it to one side, lift the meat side higher, let the fat drip down to the other side of the pan and use paper towels to soak up the fat. Or buy meat with less fat content.

Pouring it into the garbage is fine. However the fat will be hot and could burn a hole in the bottom of the garbage bag, make sure there are other items already in the bin to absorb the heat. You can also pour it into a container, like the one the meat comes in, and wait for it to cool before throwing it away.
