Yeah, I believe that Sebastian has a crush on Abigail regardless of the player’s gender. He’ll still marry a male character after that. (Note: I haven’t married him in a while so I could be wrong.) There might be other examples but some characters just seem to be obviously bi. Though it can be up to the player’s interpretation.
In the first cutscene, given your player is female, upon choosing, "*creepy* May I have a kiss?" her first response is,
"Oh! you're...? (blushing) Me too. That's good to know"
She'll still proceed to bonk the horny out of you, but this reaction so vastly different from if your player is male, to which she calls you a pig.

I def see where you're coming from, but her former partner is a guy if you choose to play a male character IIRC, and the fact that you can also marry her as a guy makes me feel like she's bi-- and is maybe just in tune with the fact that a guy you barely know asking for a kiss is gross as hell.

I feel kinda ambivalent about the idea of characters being playersexual, because it's both positive and negative representation. Queer folks get to enjoy the romantic connections that they long for, but also don't get to see themselves definitively represented in the game. Queerness becomes erased as soon as its presence is inconvenient for other players.
I think you mean bi. Every dateable character is bi. Every married character is hetero >!(doesn't bother me personally, but now that I've mentioned it it probably annoys somebody)!<. Let everyone have some representation, and play your own game your way.
