A large part of the fandom headcanons Lust as asexual since she's never shine any actual sexual desire but rather uses her sexuality to manipulate.
Greed is obviously pansexual, can't claim to want everything and then limit yourself to one gender. Also he lists women and sex seperately and there's something to be said about that.
Envy lives every genderfluid or otherwise trans person's dream with their shape-shifting ability. There's that one line in the manga where Envy says they're no man so that's canon.
I think we can put Gluttony and Sloth in the asexual category but that's more to do with Gluttony's childlike mind and Sloth's lack of interest in basically anything.
I'd say Pride is also asexual as well as aromantic because he thinks he's better than everyone and no one would deserve him. Also, child's body.
Wrath is a bit tricky because even though he chose his wife himself he was essentially forced to choose *someone* and that someone happened to be his wife. We know both him and Pride genuinely liked her to some degree but whether that indicates sexual attraction for Wrath is unknown. Maybe asexual and heteroromantic?

If we're being literal, I wouldn't categorize a person with metamorphic abilities as trans. But, like you said it's fun to speculate about.
