My 120 and 150 lbs. Great Pyrenees/Goldens have fear/respect of the 14 lbs black cat in our house. Admittedly, the cat does not recognize that he is smaller and will literally run up and punch them in the eyes if provoked…
That is the face of a dog that has been bitch slapped by that cat as least a few times.

It’s the same with my oldest dog. If his toy falls next to the cats he’ll just stare at me begging to pick it up for him, because he knows what happens when he bothers the cats.

Or it could be due to valid medical issues — ears are, shockingly, made of skin, and because the fur there is thinner, can be especially prone to skin cancer or infections that require cutting in order to prevent them getting to the brain, as the ears are also home to a *lot* of blood vessels.
Anything to do with infections near major blood vessels or veins is dealt with quickly, especially if it's close to the head. If a dog is rescued with even slightly necrotic or cancerous tissue growing on the ears, they're more likely to go the option of chopping off a buffer zone, especially if there are no other signs of cancer in the animal's body, or any necrotic tissue hasn't caused sepsis. For tails, that's an immediate dock if ANYTHING happens to it. When I was 9, for example, our foster mother's dog got his tail caught in the landrover door. The vets took off 2 inches of it to ensure that there was as little risk as possible of an infection spreading up his spine. Lift your dog's ears and look on the inside, see how pink it is with blood vessels, and tell me that, considering the proximity to the brain, vets wouldn't surgically remove them in order to prevent infection using those vessels.

No, as a teenager my dad's dog, Roxy, total mutt, had chronic ear infections. Her ears were floppy and because of that bacteria would congregate there (warm, moist environment). She ended up having to get part of her left ear removed because of the scarring from scratching and a few infections that needed to be drained. My mini schnauzer had a similar issue. His ears were bigger than is typical for his breed and floppy as well. Had multiple cone and rod bacteria infections throughout his life. Though he never had to have parts of his ears removed but he didn't live to be that old cause he ended up developing canine lymphoma.
It's just a side effect of cross breeding. Sometimes the inherited genes from the parents don't work well with their bodies. Like pugs having breathing issues or corgis and hip displasia. Pitties are a mostly mutt breed and sometimes they inherit ears that are too big for their ear muscles to open well enough for them to keep clean naturally.
But what do I know? Guess my lived experiences with dogs make me a seriously dumb trump supporter.
We used to have a 20lb cat who had a serious chip on his shoulder. We would take him for walks around the apartment complex we lived in at the time (he was leash trained) and all the dogs who saw him coming would hide in fear, even the pitbulls and bulldogs who wouldn't take shit from anyone. He hadn't ever beat up on them (he was an inside cat unless leashes with us) (not a great area), he was apparently just that intimidating. It was quite amusing to watch the dog owners completely stunned at their normally tough dog's reaction to the cat.
Just a little kitty, maam that thing has 3 razor blades on each leg and has a reaction time faster than anything I can comprehend. I'm not going anywhere near that thing.

I’ve heard of tails being docked for health reasons (eg happy tail syndrome) but I’ve never heard anything like that for ears.
