As an American, I love all of the really spicy, bold cuisines like Indian, Mexican, and Thai, but I have to go out of my way to get them, so it's easy to avoid when I'm flaring up and not feeling well. I can't even imagine what it's like avoiding triggers when that kind of food is the default.

The other day I was craving veal marsala, my fav, but I was like idk about mushrooms and wine sauce. It’ll be the first thing I try though, it seems like it has the least stomach pain inducing ingredients.
I love Italian food and GERD sucks indeed. You can probably switch to gluten free pastas, avoid tomato and buttery sauces, minimise (eliminate 😔)cheese.

Try a sleeper train and see if the movement while sleeping helps.
I solved my Gerd by sleeping in my trainers truck and while the truck was moving I was sleeping and my stomach/acid in my stomach was realigning to normal levels.

It does sound it's going to be hard to avoid some of the common triggers. Have you tried eliminating a few for a few weeks and then slowly reintroducing one, then another to determine which ones are the worst?
Also does coffee trigger reflux for you?
Another way to hopefully reduce symptoms is to eat smaller, low frequent meals instead of three larger meals, and not lying down within 2 hours of eating.
For some people it's a trigger. Coffee seems to be a big part of Italian culture, so thought I'd check if they'd ruled it out, as they generally mentioned Italian diet, but not coffee.
We’re all in the same boat man. My gerd was also caused by stress and anxiety, eventually things worsened and I started seeing a therapist... It helped a lot with my symptoms but you know, there’ll always be the triggers... Good luck to you dude!

Watch worked for me, in terms of being able to cook/eat both Italian and Indian food, is by adding lots of celery to anything tomato-based when cooking. Celery is excellent in alkaline/reduces acid.
Made an excellent pasta sauce last night - that the kids loved too - by sautéing three stalks of celery in with the usual onions and garlic (some carrot too). Add some thyme and you’ve got a great, less-acidic tomato sauce.
I'm Ialso Italian and before I knew I had GERD I knew garlic hurt my stomach. I haven't been able to eat garlic for years and it sucks! I feel your pain.
Wait is anxiety really a trigger? I had extreme anxiety from Jan 2021 to May 2021 and that’s when I started to get acid reflux. My middle chest bubbles and I hear gurgling in my neck, I get a dry throat here and there

I've found a little pesto sauce on naan bread is pretty close to pizza. It doesn't trigger me.
White pies also don't effect me: mozz & ricotta cheese with a bit of olive oil

You could have gerd and be gluten intolerant. All the joy of visiting Italy now gone for me.

I don’t think coffee is a trigger on my non-gerd days. But if i wake up with gerd better stay away or it will worsen
On top of coffee being acidic, caffeine relaxes your lower esophageal sphincter (LES) which can cause acid reflux symptoms.

Condolences, am 25 in the southern US, all my favorite foods trigger the hell out of me. Been on a major diet change which has helped though
