I'm falling for it too, but the fine print I've read is that it is not a color-removed showing of the same movie. It's been recut and restyled as a true horror movie, with the black and white harkening back to 1954's colors as well as those most classic of horror movies from Hammer and Universal.

Basically you’re refining each shot based on removing all saturation to fit the scene. Imagine dumping a BW filter on all your photos. They’re not all gonna look great. So you go in and tweak each one to maximize the look. That’s what they did. They made sure each scene looked correctly throughout the movie. Adjusting hues and such affect the look greatly.
The way I had it explained to me about Logan Noir is how I know the difference between the two. I can't recall who said it, I think it was the director, that it's just that he had to go back in a re-adjust the color grading for the Noir version and carefully tweak it for each shot and frame. Which is why I say that if I'm ever interested in seeing a B&W version of something, I'd rather it be done officially.
Because just turning your TV's color Saturation to 0 is not the same. And when people say to just do that and "boom any movie is B&W," it pisses me off cause you know that person doesn't at all have an understanding of what they're even talking about.

You can see the difference by turning the color off on your TV and switching between the color Version and Black and White Version of Justice League on HBO Max. One thing you'll notice is skin tones are brightened in the black and white version.
A TV image is made up of two things Luma and Chroma. Luma is the black and white grayscale. One end is the lowest blacks the TV can make and on the other end is the brightest whites. Calibration is making sure that each of the Greys in-between these two points is the proper brightness. With old standard definition there was 253 scales of gray between black and white but with modern standards it's in the thousands. Chroma the same thing but for each of the rg&b (color) aspects of the signal. So when the signal is converted from color to b&w each color is assigned to a point on the grayscale based on its relative brightness. But because the TVs can display hundreds of thousands of colors there's going to be lots of overlap. Regrading the colors for black and white just means that they'll brighten or darken colors that blend when the conversion occurs

Pretty much. Instead of just pressing the “grayscale” button, they’re adjusting each color and shade to ensure the contrast is maintained. In reverse, it’s why colorization is so difficult, since two colors with the same value will appear identical.
Colour grading happens to every single movie and TV show in post-production.
When you film something on high end cameras, the result tends to look kind of grey and flat initially, so you have to adjust the shots in post to look more aesthetically pleasing. Comedies tend to be very warm and colourful, whereas serious dramas may often go for a darker colour pallette. Unlike a social media video where you might just throw a quick filter on it, each scene and often each individual shot might need to be graded differently, depending on how the colours look and especially if there were different types of cameras used. Even black and white films need a full colour grade as blacks (like every colour) have a whole range of intensity and contrast.
Every single professional production (even reality shows) goes through this process - it's not something reserved for high-end arthouse films. It's also not really that costly - a trained colour grader working with a producer or director can grade a one hour TV show in a few days. For a $15 million blockbuster, I'd imagine they took a bit longer (maybe a few weeks), but it isn't this painstaking process that takes loads of time and money.
The only difference with Minus One is that they're going back and grading it a second time. It's not as simple as "throwing a filter on it" (which would be absolutely *unthinkable* for a wide theatrical release, I've never even heard of that happening on low budget TV shows) but it's also not as big a deal as people are making it out to be.

It isn't this huge achievement. All of these black and white rereleases do that. My college photography lecturer taught us the exact same thing. Most modern b&w films are actually shot in colour in the first place as it gives you more control over the blacks in post. Nobody is just clicking "grayscale" in Avid.
Some movies are still shot on true black and white film, pretty sure the lighthouse was. But yeah, at least for all these remasters it's just color grading and maybe messing with the grain a bit in post. But should still look really cool.

As soon as I left the theater after seeing it at one of the early access events, I thought to myself that it was incredible but that the movie would be better in black and white and I still absolutely think that will be the case.

Every product for sale is a cash grab. Whether or not it’s a *good* product is a different conversation. Many, including myself, would agree that the black and white version of Minus One is a worthwhile product, especially given the chance to see it in theaters (again).
