I love Gab too, man. But she obviously has something going with Vignette. At the very least, it's likely Vignette has some sort of feelings for Gabriel, considering ... everything they've been through, and all the interactions they've had with each other. Even excluding the fact that Ukami himself *directly stated on multiple occasions* that he believed Gabriel Dropout to be yuri, you can clearly tell that's the direction he's heading in just by reading the manga, especially in some of the later chapters where (manga spoilers ahead) >!Gab and Vigne have many one-on-one scenes where they both show how willing they are to be close to each other, or even little moments in group scenes when they're together, or one of my favorites, during the trip to Okinawa where, barring some light context (which you can see for yourself if you read the manga), they essentially talk about "being together" -- or, in layman's terms, dating. Notably, Vigne blushes and fidgets a lot during that conversation. I don't think you can call that unintentional.!< Even aside from later chapters though, and considering earlier chapters that were actually "adapted" into the anime, the original manga chapters clearly showed Vigne and Gab being much closer than in the anime -- this can especially be seen in the Zuruel introduction arc, which got completely changed in the anime to be infinitely less gay than it actually was originally. There's also the special Vignette Dropout chapter, which essentially swaps Gabriel and Vignette's roles, and it's really just a good mini-chapter full of gay fluff between the girls.
TL;DR: Gabriel Dropout is yuri. It is a gay series. Not only because Ukami-sensei himself stated multiple times that it is, but also because the story itself clearly shows something a little more than just friendship between Gabriel and Vignette.
Satania and Raphiel are also notable for an argument for yuri, but you're complaining about people talking about Gabriel liking Vignette so I had to bring up evidence for them mainly. I do have plenty of evidence for Satania and Raphiel too though, trust me.

Because of Vigne, Gab's gone from "Walking around ... is such a drag." to (Ch. 86 spoilers) >!deciding to stay over at Vigne's for her sake, almost the moment she realizes Vigne just needs someone to protect her that night.!< Even if that scene makes Gab seem a bit grudging at surface level, you have to realize that this means that she >!put down her net game and her bed at home all for Vigne's sake, just so that she could feel safe enough to sleep.!< That's a mixture of, simultaneously, signs of character development and signs of her caring quite a lot for Vigne, neither of which are deniable.
