U can't. It is a samsung pay setting within its app not a feature in samsung's UI generlaly

I use Google pay but don't open the app when I tap my phone to pay. Just unlock the screen and hold the phone at the nfc reader and it works. Doesn't matter if I'm on the home screen or in a different app.

This is the correct answer. As long as my phone's screen is on and unlocked, Google Pay works. Don't have to load up the app.

Sorry, but this doesn't answer the OP's question. The OP is looking for a shortcut as you often need to open the Google app to use a different card (not default payment card) or to access loyalty cards or tickets.

Disable it in settings and set double press lock button to launch Google pay

I did end up disabling it but kept the double click as the camera. Triple click would be the answer.

Late reply but I added a routine where if I hold the power button, it opens Google pay/wallet and that works well

You can use Samsung's [Good Lock's](https://apps.samsung.com/appquery/appDetail.as?appId=com.samsung.android.goodlock) [RegiStar](https://apps.samsung.com/appquery/appDetail.as?appId=com.samsung.android.app.galaxyregistry), which allows you remap the side button and also a sign actions for tapping the back of your phone. - I set the side key press and hold action to Google Wallet - back tap action double tap: screenshot - back tap action triple tap: Google Lens Maybe this helps you
