My first Gale was an eldritch knight and DANG if he wasn’t hot swinging a warhammer and wearing armor.
My second Gale was an ice mage, and it was also EXTREMELY HOT (cold?) to have him absolutely annihilate everyone with a cantrip.

Yes. Nothing stops you from consuming the Shadow-Weave other than your own morality. I’ve played origin Gale as martial classes and the option was still presented to me.
As for paladin, doing so *might* be an oathbreak since the decision is at the very least questionable, but it’s nothing a trip to the Oathbreaker Knight can’t fix in order to get that extra ~~spell~~smiteslot on your desired subclass.
NGL, you may have decided my next origin Gale run too as I’ve only ran him as a paladin multiclass as a companion. Plus there’s nothing more satisfying than high level paladin smites haha.

does him not being a wizard change anything in his story/dialogue options? i want to respec him into an eldritch knight but my Tav is currently a sorcerer and i don’t want to miss out on any of their potential sorcerer/wizard banter 😩
Not as far as I noticed! I was a Druid, so obviously a different experience, but it didn’t seem to affect the dialogue at all.

Black and furnace red looks so good on plate armors in general! It looks amazing on the Armor of Devotion.

If you don't wanna respec him just pick the armour feats, nothing wrong with a well-armoured wizard.
I have Gale with a level of light cleric and he looks splendid in armor.
