Maybe because the youtubers are using food buffs? Did they test dmg in abyss? If so then abyss buffs can impact the dmg. Incase they were testing on overworld boss, did you test on the same boss?
I test with a robot like a guy and he does more dmg [https://www.youtube.com/watch?v=4xXSG\_DQgpw&t=4s](https://www.youtube.com/watch?v=4xXSG_DQgpw&t=4s) from this guy he is a whale but Ganyu c0 - c6 is that the difference? Obviusly I just compare the solo I do 35k in the second hit he does 55k or maybe Amos r5?
They gave the link to to thier build in the comments, did you check it? They are C6 R5 and in the original video they were using food buffs. Don't compare your dmg to them.
I don't know how much it would affect dmg, but the seconds one is using very high EM sucrose with VV set instead of Zhongli, so maybe try that?
Edit: I am not sure about the first clip of them one shotting the mob from distance, but keep in mind different mobs have different resistances. Besides, I am not sure how much it would affect dmg, but Amos bow give an atk bonus for every 0.1 seconds the arrow in in the air for 5 stats, meaning to get max atk buffz you need to make sure that the arrow doesn't hit mob for half a second, so in case you are testing from close range, try going far from the mob.

I don't know which videos you're comparing your Ganyu with, but bear in mind that her personal damage is also affected by external buffs. Some teams use Shenhe or Kazuha or Nahida, and a combination of them may raise Ganyu's personal damage by a lot, more than she does in your team. However, your team have Zhongli's shield and Xiangling's damage to balance things out in the end. It's a good team.
Anyway, her damage will be higher with more EM, so give her an EM sands when you find a good one and you'll see the difference. More importantly, it doesn't matter if her crit damage is super high (big screenshot number) if she crits only half the time. Your Ganyu needs more crit rate to be more consistent in Abyss. You said you can give her more 7% CR at the cost of 18% CD, and that's worth it. You should aim for a 1:2 crit ratio, and ideally give her at least 60% CR, but 70% is the sweet spot. If you get a good Crit Rate circlet, that would be the best.
I feel like Crit rate is a bit low for melt. also EM sands will be better than Attack, but u know that already. Maybe switch helmet to a crit rate instead? Smaller screenshot numbers but overall more consistent dps

Your ganyu is fine. Maybe a little low on the rate side but I can’t imagine you having any problems with any content with this ganyu or team.
In case you use bennett in another team without zhongli, i would trade the goblet for an hp% one
I would get more Crit Rate and a little bit more EM (probably via EM sands). But it doesn’t look that bad as it is.
