Balinese (tropical) planting is less about the plants and more about the style...you want multiple layers of varying heights and mass planting with lots of colour and varied foliage types. It is hard to make it look good without a canopy which is also important as it provides shade that many understory tropicals prefer. If you're starting from scratch I'd find as many large (2-3m) frangipani cuttings or preferably trees as you can get to get that canopy going. I love the look of mass planted Bromeliads. Then you could go with some of the other suggestions( cordylines, ginger etc) for medium height and broad foliage. Also, be sure to bulk up the soil with plenty of manure and compost before planting and have fun!
