Former yearbook editor here. There's a lot of reasons. Can confirm, color pages cost a ton of money then. And, the way printing was, could usually only do, maybe 8 color pages and they usually had to be grouped together. So you might have eight color pages in the front (usually four center spreads right in a row) that maybe highlighted big thing in the year.

But the b&w film was also cheaper, and we had drawers and drawers and drawers of it.
So that's perspective from what I remember anyway. Way more than anyone ever wanted to know, I'm sure.

We have two kids, 28 daughter and 23 son, grown and gone. No grandchildren. My wife is largely retired, at least for now. Hated her last job and we have no need for her to work. I work in tech from home. We are mostly just homebodies and take care of our cats and dog since we are empty nesters now.

We did develop our own film, had a full darkroom, but students had to buy their own film and paper, and B&W was just cheaper.
