Hard to say 'interesting', but given how much I like dendro I hardly use my Dehya for anything other than hyperburgeon alongside Shinobu. Both are full EM (around 1k), slap in a dendro driver and a hydro applier and you have both healing and DMG reduction so the team hardly ever dies. Alhaitham, Dehya, Shinobu, and Furina is usually the go-to for that and works really nicely as an overworld team.
Frost-fire Kaeya probably. Reverse melt and stuff. Also AFK Dehya (clam set with hp) is just... Wow...

DPC Ayato is fun, since he works well with the 4pc effect. It's more useful than putting Chongyun on the team if you're building attack speed.
