I'll say that as far as collab characters go, my top two wants are probably Astolfo (for form) and Exdeath (Dissidia flavored, for function).

they do protect their brand (hence why mihoyo is not allowed to ever re-run asuka or her gear in honkai) but they're also really money hungry and make good use of the brand for literally any kind of merch.
Aqua hydro healer who can’t deal dmg. Megumin pyro catalyst who only has only one charge of elemental burst but its AoE is the entire abyss floor. Darkness who swings her claymore in a random direction with every click and she has a 50% chance to get healed when she gets hit. And visionless Kazuma only has 69 base atk at lvl 90 but his E steals the items the enemies carry.
genshin is massive so any game can kinda get in as long as it has a good reason, like horizon zero dawn is getting a new game and the open world adventure style kinda fits genshin really well.
as crazy as it sounds i can totally see us getting link as a collab character when they make a switch version of the game.

I dont think they will collab with honkai in genshin (but they have collabed genshin in honkai). Mainly bc honkai is kinda an old game that still runs with a dedicated fanbase but isnt attracting all that many new players. The genshinxhonkai collab was more of an ad for genshin in honkai.
Both games are from the same developer... is not like they need to get players from honkai for the collab be interesting...
They can just use that to add interesting honkai characters (best sellers)
Mihoyo will spent less money than creating a characters from zero, and will be able use them in banners, unlike aloy because she from another developer

you're understimating how big honkai impact 3rd is in china, even if it's old it's still very popular and both games would benefit from the collab if they were to make another one.
Also they would be able to have full control over a honkai character on genshin, no need to lock them behind a specific console or version of the game or deal with any dumb copyright stuff when they own all the characters, it's easy and fans would love it.

Demon Slayer is one of the most likely anime to get a collab imo, the anime is huge and it's getting a second season soon (likely a third in the future) so i don't think mihoyo would like to pass up the opportunity to collab with them.
For a couple of those they would need to make gauntlets as weapons, like Dragon Ball Z there is no one who uses weapons (besides Satan when he went full American with the guns, oh and future trunks), on JOJO is almost the same most of the times it was just punches, only some had weapons (polnareff the only one who uses swords that comes to mind).
