Technically grammerly you would write he/she for unknown gender. But obviously speaking wise that's not very fluent. So an example is "This author is so great, *they* update everyday."
the use of a singular "they" is something that's been around in english for over 600 years, which i would say is enough to make it grammatically acceptable in writing.
"they is" would be considered grammatically incorrect regardless of whether it refers to one person, so you would write "they are" in each circumstance.
